Ingredients

  • 1/2 cup melted butter
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas with a fork until smooth.
  3. Mix in the melted butter until well combined.
  4. Add the sugar, egg, and vanilla extract, mixing until smooth.
  5. Sprinkle the baking soda and salt, incorporating thoroughly.
  6. Gradually add the flour, mixing until just incorporated.
  7. Fold in the chocolate chips and walnuts (if using).
  8. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for about 18-20 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Use very ripe bananas for the best flavor. Store in an airtight container for up to three days, or freeze for up to three months.
