- 2 pounds (907g) boneless skinless chicken breasts
- 1 cup (125g) all-purpose flour
- 5 cups (140g) corn flakes cereal, crushed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 2 large eggs
- 1/4 cup (60ml) milk
- 3/4 cup (222g) BBQ sauce
- 1/4 cup (85g) honey
- 1/4 cup (68g) ketchup
Instructions
- Preheat your oven to 400°F (204°C) and prepare two large baking sheets by lining them with parchment paper or silicone baking mats.
- Place the bite-sized chicken pieces in a large bowl and add the all-purpose flour. Stir to coat well.
- Combine the crushed cornflakes, salt, pepper, garlic powder, and smoked paprika in another bowl and mix well.
- Whisk together the eggs and milk in a small bowl until combined.
- Dip each chicken piece into the egg mixture, letting the excess drain off, then roll in the cornflake mixture. Place on the prepared baking sheet.
- Bake the chicken bites for 18 minutes, flipping halfway through.
- Combine the BBQ sauce, honey, and ketchup in a small saucepan over medium heat, cook for about 5 minutes until heated through.
- Remove the chicken bites from the oven and let cool for about 5 minutes before tossing with the sauce in a large bowl.
Notes
For best results, let the chicken cool slightly after baking for better sauce adhesion.
