- 2 Zucchini, grated
- 1 cup Ricotta cheese
- 1/2 cup Grated Parmesan cheese

- 1/2 cup Mozzarella cheese, cut into small pieces
- 1/2 cup breadcrumbs
Instructions
- Grate the zucchini using a box grater or food processor. Squeeze out any excess moisture using a clean kitchen towel or paper towel.
- Combine the grated zucchini with ricotta cheese, grated Parmesan cheese, and a pinch of salt in a large mixing bowl. Mix until evenly incorporated.
- Scoop portions of the mixture and form them into patties, placing a small piece of mozzarella cheese in the center of each patty before sealing.
- Roll the patties in breadcrumbs for extra crunch.
- Heat a skillet over medium heat, adding olive oil. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- Serve warm, with sauces or your favorite toppings.
Notes
Ensure zucchini is dry for crispy patties, and chill the patties for 15 minutes before cooking to help them hold their shape.
