- 4 cups Watermelon, cubed

Instructions
- Start by preparing your ingredients. Chop the watermelon into bite-sized cubes and dice the cucumber. Thinly slice the red onion, and crumble the feta cheese. Next, gather fresh mint leaves and chop them finely.
- In a large bowl, combine the finely chopped watermelon, cucumber, red onion, feta cheese, and mint. Toss gently to combine.
- Whisk together the olive oil, lime juice, salt, and pepper in a small bowl to create a dressing. Drizzle this over the salad mixture and toss gently.
- Chill for about 30 minutes before serving to let the flavors meld. Serve cold for the best taste.

Best if served chilled. Consider adding jalapeños for a spicy kick or strawberries for added sweetness.
