Ingredients

  • 2 cans white beans (cannellini or navy)
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened, about 3-5 minutes.
  3. In a mixing bowl, combine the beans, ketchup, brown sugar, mustard, apple cider vinegar, and sautéed onion and garlic. Stir well and season with salt and pepper.
  4. Transfer the mixture into a prepared baking dish and cover with foil. Bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the sauce is bubbling and slightly caramelized.

Notes
