A flavorful and festive vegan cheese ball made with cashews and cranberries, perfect for gatherings.

Ingredients

  • 1 cup raw cashews, soaked
  • 1/4 cup nutritional yeast
  • 1/4 cup coconut cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pistachios, chopped

Instructions

  1. Soak cashews in water for at least 2 hours, then drain and rinse.
  2. Blend soaked cashews with nutritional yeast, coconut cream, garlic powder, onion powder, and salt until smooth.
  3. Stir in chopped dried cranberries and half of the pistachios.
  4. Shape mixture into a ball and coat with remaining pistachios. Chill in the refrigerator for at least 2 hours before serving.

Notes

Serve with an array of colorful crackers, baguette slices, or fresh vegetable sticks.
