  • 1 large egg

Instructions

  1. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and salt until evenly combined.
  2. In a separate bowl, mix the wet ingredients: buttermilk, egg, melted butter, and vanilla extract until well-blended.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined. Let the batter rest for about five minutes.
  4. Heat a skillet or griddle over medium heat, lightly greased with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about another 2 minutes.
  7. Transfer cooked pancakes to a warm plate and repeat with remaining batter. Serve warm with butter, maple syrup, and your favorite toppings.
