Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened (3 packages of 8 oz)
  • 1 cup brown sugar
  • 1 teaspoon vanilla bean paste
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter.
  3. Press mixture into the bottom of a springform pan.
  4. In a mixing bowl, beat cream cheese and brown sugar until silky smooth.
  5. Add vanilla bean paste and granulated sugar, mixing until combined.
  6. Incorporate eggs one at a time, mixing on low speed.
  7. Add sour cream, flour, and salt, stirring until smooth.
  8. Pour batter over crust and smooth the top.
  9. Bake for approximately 50-60 minutes, until the center is set but jiggly.
  10. Cool for 1 hour before refrigerating for at least 4 hours or overnight.

Notes

Serve with a drizzle of caramel or chocolate ganache and whipped cream for added indulgence.
