Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well incorporated.
- Gradually incorporate the dry ingredients until just mixed.
- Gently fold in the chopped strawberries.
- Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until cookies are set but still soft.
- Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack.
- Melt the chocolate chips in a microwave-safe bowl and dip the bottoms of the cooled cookies in chocolate.
- Let excess chocolate drip off, then place them on parchment paper and add sprinkles if desired. Allow chocolate to set before serving.
Notes
Store any leftovers in an airtight container for up to five days. For a healthier version, consider using whole wheat flour instead of all-purpose flour.
