Ingredients

  • 1/2 cup finely grated cucumber
  • 1 cup thick whole milk Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1/2 tablespoon extra-virgin olive oil
  • 1 clove garlic, grated
  • 1/4 teaspoon sea salt
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint (optional)

Instructions

  1. Finely grate the cucumber and squeeze out excess moisture using a kitchen towel.
  2. In a medium bowl, combine all ingredients and stir until well-blended.
  3. Cover and refrigerate until ready to serve to allow flavors to meld.

Notes

Great served with grilled meats, pita chips, or fresh vegetable sticks. Store in an airtight container for up to 3 days.
