A delightful blend of fresh vegetables and herbs, making it a perfect side dish for any meal.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

  • Diced potatoes
  • Chopped cucumber
  • Sliced red onion
  • Chopped parsley
  • Diced green pepper
  • Fresh lemon juice
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Start by bringing a large pot of salted water to a boil. Add the diced potatoes and cook until tender, about 10 to 15 minutes. Drain and let them cool.
  2. While the potatoes are cooling, prepare the vegetables. Chop the cucumber, slice the red onion, and dice the green pepper.
  3. In a large mixing bowl, combine the cooled potatoes with the chopped vegetables and parsley.
  4. Drizzle fresh lemon juice and olive oil over the salad, then season it with salt and black pepper to taste. Mix gently to combine everything well.
  5. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld. Serve chilled or at room temperature.

Notes

Chill before serving for the best flavor. You can substitute cucumbers with diced bell peppers for added crunch.
