Ingredients
For the Blueberry Filling:
4 cups fresh or frozen blueberries
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch
For the Cobbler Topping:
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
1/2 teaspoon cinnamon (optional)
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish or cast iron skillet.
In a bowl, mix blueberries, sugar, lemon juice, vanilla, and cornstarch. Pour into prepared dish.
In a separate bowl, whisk flour, sugar, baking powder, salt, and cinnamon. Stir in melted butter and milk until just combined.
Spoon batter over the berries, leaving gaps for juices to bubble through.
Bake for 35-40 minutes, until topping is golden and berries are bubbly.
Cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
Add extra cornstarch if using frozen berries. Sprinkle sugar on top before baking for a crispy finish. Store leftovers refrigerated up to 3 days.
