This Thai Cucumber Salad combines the crunch of cucumbers and the zing of lime for a refreshing treat.

Ingredients

  • 1 Red onion, thinly sliced
  • 1/2 cup Roasted peanuts, chopped
  • 1/4 cup Fresh lime juice
  • 2 tablespoons Sesame oil
  • 1 tablespoon Sambal Oelek (or chili paste)
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Combine the sliced cucumbers, red onions, and roasted peanuts in a large bowl.
  2. Whisk together the fresh lime juice, sesame oil, and Sambal Oelek in a separate bowl.
  3. Pour the dressing over the salad mixture and toss thoroughly.
  4. Season with salt to taste and garnish with fresh cilantro.

Notes

Store in the fridge for up to 2 days. Can be made vegan by using plant-based chili paste.
