- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Combine the sliced cucumbers, red onions, and roasted peanuts in a large bowl.
- Whisk together the fresh lime juice, sesame oil, and Sambal Oelek in a separate bowl.
- Pour the dressing over the salad mixture and toss thoroughly.
- Season with salt to taste and garnish with fresh cilantro.
Notes
Store in the fridge for up to 2 days. Can be made vegan by using plant-based chili paste.
