Ingredients

  • 2 Chicken breasts
  • 1/2 cup Teriyaki sauce
  • 8 small Tortillas
  • 1 cup Grilled pineapple, chopped
  • 1 Pear, diced
  • 1/4 Red onion, diced
  • Juice of 1 Lime
  • Cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  1. Marinate the chicken breasts in teriyaki sauce for at least 30 minutes.
  2. Preheat the grill or a grill pan. Grill the chicken for about 6-7 minutes on each side.
  3. Prepare the salsa by mixing the grilled pineapple, diced pear, diced red onion, lime juice, salt, and pepper in a bowl.
  4. Remove the chicken from the grill and let it rest before slicing into strips.
  5. Warm the tortillas on the grill for about 30 seconds on each side.
  6. Assemble the tacos by placing chicken strips and a spoonful of pineapple pear salsa in each tortilla.
  7. Garnish with cilantro and serve immediately.

Notes

Allow the chicken to marinate for flavor and tenderness. Use chicken thighs for juicier meat.
