- 2 medium sweet potatoes, peeled and sliced into ¼-inch rounds

- 6 ounces brie cheese, sliced
- Salt and pepper to taste
- Dried cranberries for topping
- Chopped pecans for topping

Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Arrange the sweet potato rounds on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss gently to coat.
- Roast in the preheated oven for 20–25 minutes, flipping halfway through, until tender and caramelized.
- Remove from the oven and place a slice of brie on top of each round for approximately 5 minutes until melted.
- Top with dried cranberries and chopped pecans, and garnish with fresh herbs if desired.
Notes
This dish can be prepared in advance by preparing the sweet potato rounds and then baking them just before serving. Consider alternative toppings like dried apricots or nuts based on preference.
