Ingredients

  • 1 cup Light brown sugar (packed)
  • 1 cup Vegetable oil or melted butter
  • 4 Large eggs
  • 1 1/2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 2 cups Chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. Mix the sugar, brown sugar, vegetable oil or melted butter, and eggs in a large mixing bowl until smooth.
  3. Combine the flour, baking powder, and salt in a separate bowl, then gradually add this to the wet ingredients.
  4. Add the vanilla extract and fold in the chopped pecans.
  5. Bake the batter in the prepared pan for 30 to 35 minutes until golden, and a toothpick comes out clean.
  6. Cool completely and slice into squares for serving.

Notes

For a healthier version, substitute all-purpose flour with whole wheat flour. Top with whipped cream or caramel sauce when serving.
