Ingredients
150g plain flour
4 small to medium eggs
450ml milk
1 tbsp melted butter (plus extra for frying)
1 tsp salt
1 tbsp sugar
100g milk chocolate
100g dark chocolate
1/2 cup whipping cream
2 tbsp honey
250ml double cream
2 ½ tbsp caster sugar
1 tsp vanilla extract
Biscoff spread or crushed biscuits
Oreo cookie pieces
Chocolate spread
Fresh strawberries or mango slices
Instructions
Whisk together flour, eggs, milk, sugar, salt, and butter until smooth. Let rest for 30 minutes if possible.
Heat a pan over medium heat, brush with butter, and cook crepes one at a time until golden on both sides. Set aside under a towel.
Whip the double cream, sugar, and vanilla until stiff peaks form. Chill until needed.
Melt chocolates, cream, and honey in a microwave-safe bowl in 30-second bursts. Stir until smooth and glossy.
Lay a crepe flat, spread with cream or chocolate, add fruit or crushed cookies. Roll tightly.
Refrigerate the rolls for 10–15 minutes to set. Slice into sushi-style pieces and serve immediately.

Use freshly made or gently warmed crepes for easy rolling. Mix textures in your filling, try fruit, cream, and crunch in one bite.
