Ingredients

  • 1 3/4 cups almond flour
  • 3/4 cup granulated erythritol
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • Fresh berries for topping

Instructions

  1. Preheat the oven to 350°F and grease a 9×9 inch baking dish.
  2. Combine almond flour, erythritol, and melted butter in a mixing bowl until well combined. Press into the bottom of the dish.
  3. Beat together cream cheese, sour cream, eggs, vanilla extract, and lemon juice with an electric mixer until smooth.
  4. Pour the cream cheese mixture over the crust, spreading evenly.
  5. Bake for 30-35 minutes until the edges are golden and the center is set.
  6. Cool completely at room temperature before chilling in the fridge for at least 2 hours.
  7. Cut into bars and top with fresh berries before serving.
