- 1 box (15.25 ounces) strawberry cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1 package (8 ounces) cream cheese
- 1/2 cup unsalted butter, melted
- 2 1/2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1 cup diced strawberries (plus extra for garnish)
- 2 cups white chocolate chips
- Vanilla ice cream (optional for serving)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large mixing bowl, combine the strawberry cake mix, eggs, water, and vegetable oil. Beat for 2 to 3 minutes until smooth.
- Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick comes out clean. Allow to cool completely.
- In a bowl, combine softened cream cheese and melted butter, then gradually add confectioners’ sugar, vanilla extract, and kosher salt until smooth.
- Once the cake is cooled, fold in diced strawberries and white chocolate chips into the frosting mixture.
- Spread the frosting generously over the cake and garnish with additional strawberries.
- Serve with vanilla ice cream if desired.
Notes
For a richer flavor, swap white chocolate for dark chocolate chips. Ensure the cake cools completely for best results.
