- 2 cups strawberries, hulled and sliced

- Fresh mint leaves, for garnish
Instructions
- In a large bowl, combine the hulled and sliced strawberries, diced cucumber, and thinly sliced red onion.
- In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour it over the salad and toss gently to combine.
- Sprinkle feta cheese on top if desired, then finish with fresh mint leaves to garnish.
Notes
Store in the fridge for up to 3 days. Experiment with flavors by substituting balsamic vinegar with lemon juice or add diced peaches for a twist.
