Instructions
- Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
- Mix together the dry ingredients: 1 1/2 cups of all-purpose flour, 1/2 cup sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt in a large bowl.
- Whisk together 1/3 cup milk, 1/4 cup vegetable oil, and 1 egg until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined; fold in 1 cup of chopped strawberries.
- Beat the softened cream cheese until smooth for the filling.
- Fill muffin cups halfway with batter, add a dollop of cream cheese, and top with more batter.
- Mix 1/4 cup brown sugar, 1/4 cup flour, and 1/4 teaspoon cinnamon with 2 tablespoons melted butter; sprinkle on muffins.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Cool slightly before serving.
Notes
Use fresh strawberries for the best flavor. You can substitute low-fat cream cheese for a healthier option.
