- 6 medium Flour Tortillas (about 8-inch)
- 8 oz Cream Cheese, softened
- 1/3 cup Powdered Sugar
- 1 tsp Vanilla Extract
- 1 cup Fresh Strawberries, diced
- 3 tbsp Butter, melted
- 1/2 cup Granulated Sugar
- 2 tsp Ground Cinnamon
Instructions
- In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. If your filling feels a bit runny, fold in diced strawberries and chill for 10 minutes.
- In a separate bowl, mix the granulated sugar and ground cinnamon. Lay each tortilla flat, spreading about two heaping tablespoons of the cream cheese mixture down the center.
- Roll the tortillas tightly like burritos, tucking in the edges. Brush the outside with melted butter and roll them in the cinnamon sugar mixture.
- Heat a non-stick skillet over medium heat and cook the roll ups seam-side down for 2-3 minutes on each side until golden brown and crispy. Serve warm.
Notes
These roll ups are best enjoyed fresh and warm. Store any leftovers in an airtight container in the refrigerator for 2-3 days.
