  • 1 cup Fresh Spinach, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and chop 1 cup of fresh spinach and mince 2 cloves of garlic.
  3. In a mixing bowl, combine chopped spinach, crumbled feta cheese, and minced garlic. Season with salt and pepper.
  4. Lay the salmon fillets flat, season with salt and pepper, and spread the spinach mixture evenly across each fillet.
  5. Roll the salmon fillets tightly and secure them with toothpicks.
  6. Heat olive oil in a skillet over medium heat and sear each pinwheel for 2-3 minutes on both sides until golden brown.
  7. Transfer the pinwheels to a baking dish and bake for 15-20 minutes until fully cooked.
