- 4 pieces Salmon Fillets
- 1 cup Fresh Spinach, chopped
- 1/2 cup Feta Cheese, crumbled
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- Salt & Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and chop 1 cup of fresh spinach and mince 2 cloves of garlic.
- In a mixing bowl, combine chopped spinach, crumbled feta cheese, and minced garlic. Season with salt and pepper.
- Lay the salmon fillets flat, season with salt and pepper, and spread the spinach mixture evenly across each fillet.
- Roll the salmon fillets tightly and secure them with toothpicks.
- Heat olive oil in a skillet over medium heat and sear each pinwheel for 2-3 minutes on both sides until golden brown.
- Transfer the pinwheels to a baking dish and bake for 15-20 minutes until fully cooked.
Notes
For extra flavor, consider adding fresh herbs like dill or parsley to the spinach mixture or substituting feta with goat cheese or mozzarella.
