- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion turns translucent, about 3-5 minutes.
- Add the diced potatoes and Cajun seasoning to the pot, stirring well to combine.
- Pour in the vegetable broth and bring to a boil. Lower the heat and simmer for approximately 20 minutes, or until the potatoes are tender.
- Using an immersion blender, puree the soup until smooth. If using a regular blender, blend in batches.
- Stir in the milk or cream, season with salt and pepper to taste, and heat through just until warmed. Serve hot, garnished with chopped green onions.
