Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion turns translucent, about 3-5 minutes.
  2. Add the diced potatoes and Cajun seasoning to the pot, stirring well to combine.
  3. Pour in the vegetable broth and bring to a boil. Lower the heat and simmer for approximately 20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, puree the soup until smooth. If using a regular blender, blend in batches.
  5. Stir in the milk or cream, season with salt and pepper to taste, and heat through just until warmed. Serve hot, garnished with chopped green onions.

Notes

Customize with plant-based milk or add fresh herbs for extra flavor.
