Instructions
- In a large bowl, combine the cooked shredded chicken with Greek yogurt and mix until well blended.
- Add chili powder, cumin, black beans, fire-roasted corn, and diced bell pepper to the bowl.
- Stir together until evenly mixed.
- Season with salt, pepper, and lime juice to taste, garnishing with fresh cilantro if desired.
- Serve immediately or refrigerate for later use.
Notes
Use flavored Greek yogurt for extra zest. Can substitute chicken with canned tuna or chickpeas.
