  • 2 Grilled chicken breasts, diced
  • 1 can Black beans, rinsed and drained
  • 1 cup Sweet corn (fresh or canned)
  • 4 cups Romaine lettuce, chopped
  • 1 Avocado, sliced
  • 1 cup Cherry tomatoes, halved
  • 1/4 cup Fresh cilantro, chopped (optional)
  • 1/4 cup Chipotle-lime dressing

Instructions

  1. In a large bowl, combine the diced grilled chicken, rinsed black beans, corn, chopped romaine lettuce, sliced avocado, and halved cherry tomatoes. Add the fresh cilantro if desired.
  2. Drizzle the chipotle-lime dressing over the salad mixture.
  3. Toss everything together gently until well combined, being careful not to mash the avocado.
