- 2 Grilled chicken breasts, diced
- 1 can Black beans, rinsed and drained
- 1 cup Sweet corn (fresh or canned)
- 4 cups Romaine lettuce, chopped
- 1 Avocado, sliced
- 1 cup Cherry tomatoes, halved
- 1/4 cup Fresh cilantro, chopped (optional)
- 1/4 cup Chipotle-lime dressing
Instructions
- In a large bowl, combine the diced grilled chicken, rinsed black beans, corn, chopped romaine lettuce, sliced avocado, and halved cherry tomatoes. Add the fresh cilantro if desired.
- Drizzle the chipotle-lime dressing over the salad mixture.
- Toss everything together gently until well combined, being careful not to mash the avocado.
