Ingredients

  • 200g Spaghetti or fettuccine
  • 100g Smoked salmon, chopped
  • 2 Large egg yolks
  • 100ml Heavy cream
  • 50g Grated Parmesan cheese
  • 2 cloves Garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish), to taste

Instructions

  1. Cook the spaghetti or fettuccine according to package instructions until al dente, about 8 to 10 minutes. Drain the pasta, reserving a bit of the pasta water.
  2. In a bowl, whisk together the egg yolks, heavy cream, and grated Parmesan cheese. Season with salt and pepper and set aside.
  3. In a large pan over medium heat, sauté the minced garlic for about 1 minute until fragrant. Add the drained pasta and toss to absorb the garlic flavor.
  4. Remove the pan from heat and quickly add the egg mixture, stirring vigorously. Use reserved pasta water as needed to achieve a creamy consistency. Gently fold in the chopped smoked salmon and mix well.
