- 200g Spaghetti or fettuccine
- 100g Smoked salmon, chopped
- 2 Large egg yolks
- 100ml Heavy cream
- 50g Grated Parmesan cheese
- 2 cloves Garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish), to taste
Instructions
- Cook the spaghetti or fettuccine according to package instructions until al dente, about 8 to 10 minutes. Drain the pasta, reserving a bit of the pasta water.
- In a bowl, whisk together the egg yolks, heavy cream, and grated Parmesan cheese. Season with salt and pepper and set aside.
- In a large pan over medium heat, sauté the minced garlic for about 1 minute until fragrant. Add the drained pasta and toss to absorb the garlic flavor.
- Remove the pan from heat and quickly add the egg mixture, stirring vigorously. Use reserved pasta water as needed to achieve a creamy consistency. Gently fold in the chopped smoked salmon and mix well.
Notes
Serve immediately, garnished with fresh parsley for added color and flavor.
