- 2 lbs Boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 cup Shredded cheese (cheddar or Mexican blend)
- 8 Taco shells or tortillas
- 1 cup Shredded lettuce
- 1/2 cup Diced tomatoes
- 1/4 cup Chopped onions
- 1/4 cup Sour cream
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Pour BBQ sauce over the chicken and season with salt and pepper to taste.
- Cook on low for 360 minutes or on high for 240 minutes, until the chicken is tender and shreddable.
- Shred the chicken using two forks and mix it with the sauce in the slow cooker.
- Serve the shredded chicken in taco shells or tortillas.
- Top with shredded cheese, lettuce, diced tomatoes, onions, and a dollop of sour cream.
Notes
Use two forks to shred chicken for even texture. Consider swapping BBQ sauce with a tomato-based sauce for a different flavor.
