Ingredients

  • 1 lb Ground Beef
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning
  • 1 can Diced tomatoes
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn
  • Salt and pepper, to taste
  • Tortilla chips or rice, for serving
  • Toppings (cheese, sour cream, avocado, salsa, etc.)

Instructions

  1. In a slow cooker, add the ground beef, chopped onion, minced garlic, taco seasoning, diced tomatoes, black beans, and corn. Stir gently to combine.
  2. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. Stir halfway through for even cooking.
  3. Season with salt and pepper to taste. Serve over tortilla chips or rice with desired toppings.

Notes

You can prepare the mixture ahead of time and store it in the fridge. The taste will be even better when cooked fresh.
