Instructions

  1. In a large bowl, combine the whole wheat flour, instant yeast, and salt. Stir thoroughly to mix the dry ingredients. Add warm water and honey or molasses (if using), stirring until a sticky dough forms.
  2. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise at room temperature for about 12 to 18 hours.
  3. Once risen, gently transfer the dough onto a floured surface, shape into a round loaf, and let it rest for another 45 minutes.
  4. Preheat the oven to 450°F. Place a baking sheet or skillet inside to heat. Transfer the dough onto parchment paper and slide it onto the hot baking sheet. Bake for 35 to 40 minutes until golden brown and hollow-sounding when thumped.
  5. Remove from the oven and let cool on a wire rack before slicing.
