Ingredients

  • 1 tbsp Olive Oil

  • 1/2 cup Plain Greek Yogurt

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Slice the sweet potatoes into thin, uniform rounds and toss them in a large bowl with olive oil and salt.
  3. Spread the sweet potato rounds in a single layer on the baking sheet and roast for about 20 minutes, flipping halfway through.
  4. While the sweet potatoes are roasting, mix together the Greek yogurt, lemon juice, and garlic powder in a small bowl.
  5. Once the sweet potatoes are tender and lightly browned, serve them warm with the yogurt dip.
