- 2 large Sweet Potatoes (sliced into rounds)

Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Slice the sweet potatoes into thin, uniform rounds and toss them in a large bowl with olive oil and salt.
- Spread the sweet potato rounds in a single layer on the baking sheet and roast for about 20 minutes, flipping halfway through.
- While the sweet potatoes are roasting, mix together the Greek yogurt, lemon juice, and garlic powder in a small bowl.
- Once the sweet potatoes are tender and lightly browned, serve them warm with the yogurt dip.
Notes
