Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potatoes into rounds, about 1/4 inch thick.
- Toss the sweet potato rounds with olive oil and salt in a bowl.
- Spread the rounds out in a single layer on a baking sheet.
- Roast in the oven for 20-25 minutes or until tender and caramelized, flipping halfway through.
- Top each sweet potato round with crumbled feta cheese and drizzle with honey.
- Garnish with fresh herbs if desired and serve warm.
Notes
For a vegan option, replace feta with a plant-based cheese alternative. To add spice, sprinkle chili flakes or cayenne pepper before roasting.
