- 1 bunch asparagus, woody ends trimmed
- 4 large carrots, peeled and sliced into sticks
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Grated Parmesan cheese, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare a baking sheet lined with parchment paper or aluminum foil.
- Place the asparagus and carrot sticks on the baking sheet, drizzle with olive oil, and sprinkle with garlic, thyme, salt, and pepper. Toss to coat.
- Roast in the oven for 20-25 minutes, tossing halfway through, until tender and lightly browned.
- Transfer to a serving platter and sprinkle with grated Parmesan cheese before serving, if desired.
Notes
Don’t skip tossing the veggies halfway for even roasting. Experiment with spices for added flavor.
