Ingredients

  • 1 bunch asparagus, woody ends trimmed
  • 4 large carrots, peeled and sliced into sticks

  • 2 cloves garlic, minced

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet lined with parchment paper or aluminum foil.
  3. Place the asparagus and carrot sticks on the baking sheet, drizzle with olive oil, and sprinkle with garlic, thyme, salt, and pepper. Toss to coat.
  4. Roast in the oven for 20-25 minutes, tossing halfway through, until tender and lightly browned.
  5. Transfer to a serving platter and sprinkle with grated Parmesan cheese before serving, if desired.
