- 2 cups Chopped rhubarb

Instructions
- In a saucepan, combine the chopped rhubarb, honey, water, and ground cinnamon.
- Cook the mixture over medium heat until the rhubarb becomes soft, about 10 to 15 minutes.
- Stir in the vanilla extract and cook for an additional five minutes.
- Use an immersion blender to puree the mixture until smooth.
- Transfer the butter into a jar and let it cool before storing in the refrigerator for up to two weeks.
Notes
Use fresh rhubarb for the best flavor. Adjust sweetness with additional honey if necessary.
