A delightful sweet spread made from fresh rhubarb, honey, and aromatic spices, perfect for toast, pancakes, or desserts.

Ingredients

  • 2 cups Chopped rhubarb
  • 1/2 cup Honey
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
  • 1/4 cup Water

Instructions

  1. In a saucepan, combine the chopped rhubarb, honey, water, and ground cinnamon.
  2. Cook the mixture over medium heat until the rhubarb becomes soft, about 10 to 15 minutes.
  3. Stir in the vanilla extract and cook for an additional five minutes.
  4. Use an immersion blender to puree the mixture until smooth.
  5. Transfer the butter into a jar and let it cool before storing in the refrigerator for up to two weeks.

Notes

Use fresh rhubarb for the best flavor. Adjust sweetness with additional honey if necessary.
