- 2 tablespoons butter
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 pound boneless chicken breast or thighs
- 6 cups chicken broth
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup milk
- 2 tablespoons fresh parsley, chopped
Instructions
- Melt the butter in a large pot over medium heat. Add the chopped onion, sliced carrots, and celery and stir until softened, about 5 to 7 minutes. Add the minced garlic at the end.
- Add chicken to the pot and lightly sear, ensuring it’s browned on all sides. Pour in the chicken broth and bring to a gentle simmer.
- In a separate bowl, mix the flour, baking powder, salt, and pepper. Gradually stir in the milk until a thick dough forms. Drop spoonfuls of the dough into the simmering broth. Cover and let steam for about 15 minutes until the dumplings are fluffy.
Notes
For a low-carb version, consider replacing flour with almond flour for keto-friendly dumplings. Add spices like cayenne for a kick, or use herbs like thyme for extra flavor.
