- 1 cup long-grain white rice
- 2 cups water (for soaking)
- 2 cups milk (or dairy-free alternative)
- 1/2 cup pumpkin puree
- 1/4 cup sugar (adjust to taste)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rinsed rice and 2 cups of water in a bowl. Let it soak for at least 4 hours or overnight.
- After soaking, strain the water and blend the rice with the soaked water until smooth.
- Strain the blended mixture into a pitcher using cheesecloth or a fine mesh sieve to remove any rice solids.
- Stir in the milk, pumpkin puree, sugar, cinnamon, nutmeg, vanilla extract, and a pinch of salt until everything is well combined.
- Chill the mixture until it’s cold and serve over ice, or heat for a warm treat.
