  • 2 cups water (for soaking)
  • 2 cups milk (or dairy-free alternative)
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar (adjust to taste)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice and 2 cups of water in a bowl. Let it soak for at least 4 hours or overnight.
  3. After soaking, strain the water and blend the rice with the soaked water until smooth.
  4. Strain the blended mixture into a pitcher using cheesecloth or a fine mesh sieve to remove any rice solids.
  5. Stir in the milk, pumpkin puree, sugar, cinnamon, nutmeg, vanilla extract, and a pinch of salt until everything is well combined.
  6. Chill the mixture until it’s cold and serve over ice, or heat for a warm treat.
