- 3 cups of flour
- 1 cup of brown sugar
- 1/2 cup of granulated sugar
- 1 teaspoon kosher salt
- 1 tablespoon of cinnamon
- 1 tablespoon of pumpkin pie spice
- 1 cup of butter, melted
- 2 and 1/4 cups of flour
- 1 and 1/2 cups of granulated sugar
- 1 tablespoon of baking powder
- 1/2 cup of softened butter, chopped
- 1 can of pumpkin puree
- 4 eggs
- 1/2 cup of vegetable oil
- 1 teaspoon of vanilla extract
Instructions
- Preheat oven to 350°F and grease a 9×13 inch cake pan.
- Whisk, In a large bowl, together 3 cups of flour, brown sugar, granulated sugar, salt, cinnamon, and pumpkin pie spice.
- Melt 1 cup of butter, then pour it into the flour mixture, mixing until it resembles wet sand.
- Combine, In another bowl, the remaining 2 and 1/4 cups of flour, 1 and 1/2 cups of granulated sugar, baking powder, baking soda, and salt.
- Add chopped 1/2 cup of softened butter to the dry ingredients and mix until just incorporated.
- Whisk , In the bowl with melted butter, together the pumpkin puree, eggs, vegetable oil, and vanilla.
- Add Carefully the egg mixture to the flour mixture, stirring gently until combined.
- Spread 2 cups of batter into the prepared pan, sprinkle 1 cup of streusel on top, add another 2 cups of batter, and follow with remaining streusel.
- Bake for 35 minutes, sprinkle any remaining streusel on top, and bake for an additional 10-15 minutes until a toothpick comes out clean.
- Let cool on a wire rack for at least 15-20 minutes before slicing.
Notes
For added flavor, consider adding chocolate chips, nuts, or spices like nutmeg or ginger. The cake can be served warm with icing or powdered sugar.
