Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar for about 2-3 minutes until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the creamed butter mixture, mixing just until combined.
  4. Fold in the chopped pistachios and dried cranberries.
  5. Shape about a tablespoon of dough into a wreath shape and place on the baking sheets, leaving space between each cookie. Bake for 12-15 minutes until edges turn lightly golden.
  6. Let cookies sit for 5 minutes on baking sheets before transferring to a wire rack to cool. Dust with powdered sugar before serving, if desired.
