- 1 bunch asparagus
- 1/2 cup shaved parmesan cheese
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Trim the ends of the asparagus and place them on a baking sheet.
- Drizzle olive oil over the asparagus and toss to coat evenly.
- Add minced garlic, salt, and pepper, tossing everything again.
- Sprinkle shaved parmesan cheese and halved tomatoes on top.
- Roast in the oven for 15-20 minutes until the asparagus is tender.
- Drizzle with balsamic glaze before serving.
Notes
Cut the ends of asparagus for tenderness. For a vegan option, use nutritional yeast instead of parmesan.
