  • 2 Mashed Ripe Bananas
  • 1/2 cup Unsalted Butter, Melted
  • 1 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Chopped Walnuts (optional)
  • Salted Caramel Buttercream for Frosting (to taste)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, combine the mashed bananas with the melted butter.
  3. Add the brown sugar, egg, and vanilla extract to the banana mixture, stirring until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually incorporate this mixture into the banana mix, stirring just until combined.
  5. If using walnuts, gently fold them in now.
  6. Pour the batter into the prepared pan and spread it evenly before placing it in the oven.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before frosting with the salted caramel buttercream.

Notes

These bars are best served warm with a scoop of vanilla ice cream or yogurt. Store any leftovers in an airtight container for up to four days.
