  • 8 oz Cream cheese (softened)
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 1 cup Fresh raspberries
  • 1 tablespoon Raspberry jam
  • Fresh mint leaves (for garnish)

Instructions

  1. Beat the softened cream cheese in a large mixing bowl until smooth.
  2. Gradually add the powdered sugar while beating continuously.
  3. Mix in the vanilla extract until well blended.
  4. In a separate bowl, whip the heavy cream until soft peaks form.
  5. Fold one-third of the whipped cream into the cream cheese mixture.
  6. Gently fold in the remaining whipped cream.
  7. Set aside 1/4 cup of raspberries for garnish, then fold the rest and the raspberry jam into the cream mixture.
  8. Pour the filling into the graham cracker crust.
  9. Arrange the reserved raspberries on top and refrigerate for at least 4 hours or overnight.

Notes

For a different flavor, try using strawberries, blueberries, or peaches instead of raspberries. You can also customize the crust with chocolate cookies or oats.
