Ingredients

  • Graham cracker crumbs: 1 1/2 cups
  • Sugar (for crust): 1/4 cup
  • Unsalted butter, melted: 1/2 cup
  • Cream cheese, softened: 2 cups
  • Powdered sugar: 1 cup
  • Vanilla extract: 1 teaspoon
  • Heavy whipping cream: 1 cup
  • Fresh blueberries: 2 cups
  • Sugar (for topping): 1/4 cup
  • Lemon juice: 1 tablespoon

Instructions

  1. Prepare the crust by combining graham cracker crumbs, 1/4 cup of sugar, and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
  2. Make the cream cheese filling by beating cream cheese until smooth, then adding powdered sugar and vanilla extract, mixing until combined.
  3. Whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
  4. Spread the cream cheese mixture over the crust and prepare the blueberry topping.

Notes

Chill for at least 4 hours or overnight before serving. Customize by using low-fat cream cheese or different fruits.
