Ingredients

  • 4 Boneless, Skinless Chicken Breasts
  • 1 tbsp Olive Oil
  • 1 packet Taco Seasoning
  • 1 can Diced Tomatoes with Green Chilies
  • 1 cup Heavy Cream
  • 1 cup Shredded Cheese (cheddar or Mexican blend)
  • Fresh Cilantro (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5 to 7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the taco seasoning and the can of diced tomatoes with green chilies. Stir and cook for about a minute to release the flavors.
  3. Pour in the heavy cream and stir continuously until the sauce starts to simmer. Cook for a few minutes until slightly thickened. Return the chicken to the skillet and top with the shredded cheese. Cover and cook for an additional 2 to 3 minutes until the cheese melts.
  4. Garnish with chopped cilantro before serving.
