- 4 Boneless, Skinless Chicken Breasts
- 1 tbsp Olive Oil
- 1 packet Taco Seasoning
- 1 can Diced Tomatoes with Green Chilies
- 1 cup Heavy Cream
- 1 cup Shredded Cheese (cheddar or Mexican blend)
- Fresh Cilantro (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 5 to 7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add the taco seasoning and the can of diced tomatoes with green chilies. Stir and cook for about a minute to release the flavors.
- Pour in the heavy cream and stir continuously until the sauce starts to simmer. Cook for a few minutes until slightly thickened. Return the chicken to the skillet and top with the shredded cheese. Cover and cook for an additional 2 to 3 minutes until the cheese melts.
- Garnish with chopped cilantro before serving.
