- 4 Flour Tortillas
- 1 cup Fresh Spinach (chopped)
- 1/2 cup Shredded Mozzarella Cheese
- 1/2 cup Crumbled Feta Cheese
- 1 Small Tomato (diced)
- 1/4 cup Red Onion (thinly sliced)
- 1 tablespoon Olive Oil
- Black Pepper (to taste)
Instructions
- Prep the Filling: In a mixing bowl, combine the shredded mozzarella cheese, crumbled feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix well.
- Assemble the Quesadillas: Take one flour tortilla and lay it flat. Spoon one-fourth of the filling mixture onto half of the tortilla. Fold the tortilla over to cover the filling.
- Cook the Quesadillas: Heat a non-stick skillet over medium heat and add olive oil. Place the filled tortilla in the skillet. Cook for about 3-4 minutes until golden brown.Then flip and cook for another 3-4 minutes. Slice and serve with your favorite dipping sauce.
Notes
For a gluten-free option, swap flour tortillas for corn tortillas. You can also add spices like oregano or fresh herbs for extra flavor.
