- 1.5 pounds Chicken breast, cut into bite-sized pieces
- 3 cups Fresh spinach
- 1.5 cups Cherry tomatoes, halved
- 1 Large red bell pepper, diced
- 1 Medium yellow squash, sliced
- 4 Garlic cloves, minced
- 3 tablespoons Olive oil
- 1 teaspoon Dried oregano
- 0.5 teaspoon Red pepper flakes
- Zest of 1 lemon
- Salt and black pepper to taste
Instructions
- Pat the chicken breast pieces dry with paper towels and season them with salt, black pepper, and half of the dried oregano.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sear for 5-6 minutes until golden-brown, then transfer to a plate.
- In the same skillet, add the remaining olive oil, minced garlic, and sauté for 30 seconds until fragrant.
- Add the diced bell pepper and sliced yellow squash; cook for 4-5 minutes until softened.
- Add cherry tomatoes and return the chicken to the skillet.
- Add fresh spinach and the remaining seasonings; toss until the spinach wilts, about 2-3 minutes.
- Remove from heat, stir in lemon zest, adjust seasonings, and serve immediately.
Notes
Use fresh ingredients for maximum flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
