Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the cod fillets in a baking dish and season with salt and pepper.
- Scatter the cherry tomatoes and Kalamata olives around the fish.
- Drizzle with olive oil and lemon juice.
- Mince the garlic and sprinkle it over the fish and vegetables.
- Bake for 15 to 20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Serve warm, garnished with fresh herbs if desired.
Notes
Ensure cod is fresh for best results. Consider using green olives as an alternative to Kalamata olives.
