Ingredients

  • 1 cup fresh pineapple juice
  • 6-8 fresh mint leaves
  • 1-2 teaspoons simple syrup (to taste)
  • 1 drop green food coloring or 1 tbsp spinach/matcha water
  • Crushed ice
  • Lime wheels, pineapple wedges, or mint leaves for garnish (optional)

Instructions

  1. Pour fresh lime juice into a mixing pitcher or glass.
  2. Slowly add pineapple juice and stir well to combine.
  3. Lightly press mint leaves once with a spoon and add to the mix.
  4. Add the green coloring and gently stir to combine.
  5. Stir the mixture approximately 10–12 turns.
  6. Taste the mixture and adjust the sweetness with simple syrup if needed.
  7. Fill a serving glass with crushed ice.
  8. Pour the drink over the ice and garnish with lime, pineapple, or mint leaves.
