- 2 cups diced potatoes

Instructions
- Boil your diced potatoes in salted water until tender, about 10 to 15 minutes.
- Drain the potatoes and let them cool completely.
- Whisk together creamy mayonnaise, sweet sugar, salt, and fresh ground pepper until smooth in a large mixing bowl.
- Add the cooled potatoes, diced carrots, diced cucumbers, and chopped green onions to the bowl.
- Toss everything gently until well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Chill before serving for the best flavor. You can substitute Greek yogurt for mayonnaise for a lighter option.
