Rich chocolate banana muffins made with Kodiak Cakes mix, ripe bananas, and chocolate chips. High in protein and fiber, these muffins are the perfect healthy treat for breakfast, snacks, or dessert.

Ingredients

Dry Ingredients:

1 cup Kodiak Cakes Mix

1/4 cup unsweetened cocoa powder

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark or semi-sweet chocolate chips

Wet Ingredients:

2 ripe bananas, mashed

1 large egg

1/4 cup milk (dairy or non-dairy)

2 tbsp honey or maple syrup

1 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Line or grease a muffin tin.

Mash bananas in a large bowl. Add egg, milk, honey, and vanilla. Mix well.

In a separate bowl, whisk Kodiak mix, cocoa powder, baking powder, and salt.

Gradually add dry ingredients to wet ingredients. Stir gently until just combined.

Fold in chocolate chips.

Fill muffin cups 3/4 full. Bake for 18–22 minutes or until a toothpick comes out clean.

Let cool 5 minutes in the pan, then transfer to a rack to cool completely.

Notes

Store at room temperature for 2 days, refrigerated for 5 days, or frozen for 3 months. Warm slightly before serving for best flavor.
