Fluffy, high-protein Kodiak Cakes muffins made without bananas. These easy muffins use Greek yogurt, applesauce, or pumpkin puree for moisture and flavor, making them a perfect breakfast or snack option.
Ingredients
Dry Ingredients:
1 cup Kodiak Cakes Mix
1/2 tsp baking powder
1/2 tsp cinnamon (optional)
1/4 tsp salt
Wet Ingredients:
1 large egg
1/4 cup milk (dairy or non-dairy)
2 tbsp honey or maple syrup
1 tsp vanilla extract
1/2 cup banana substitute (Greek yogurt, applesauce, pumpkin puree, etc.)
Instructions
Preheat oven: to 350°F (175°C). Line or grease a muffin tin.
Whisk: In a large bowl, egg, milk, honey, vanilla, and your chosen banana substitute until smooth.
Mix: In a separate bowl, Kodiak Cakes mix, baking powder, cinnamon, and salt.
Fold: Gradually dry ingredients into the wet mixture until just combined.
Spoon: batter into muffin cups, filling each about 3/4 full.
Bake: for 18–22 minutes until a toothpick comes out clean.
Cool: in pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use thicker substitutes like yogurt or tofu with extra milk; use less milk with thinner ones like applesauce. Store 2 days at room temperature, 5 in fridge, or 3 months in freezer.
